Making people and ideas findable

The discussion board seemed a little slow so I thought I'd inject it with flavor!
As a chef, I can tell you that this summers corn crop was maybe the sweetest I've ever had. Tomato's not so much. Still delicious though!

I did a lot of cooking with pablano and anaheim chiles. Heat for the heat. Also did lamb on my grill (charcoal of course) marinated with olive oil, garlic and fresh herbs served over a salad of field greens with a balsamic vinegar, garlic & fresh herb dressing. Side of grilled asparagus marinated in the salad dressing. The lamb and balsamic dressing were an outstanding pair. We can discuss "food royalties" if you use it.

What was popular at your restaurant?

THe Local food movement is still going strong, so anything that comes from close to home was popular. Lamb, Goat, Michigan Lake trout all very popular.

Your grub sounds awesome!

We ate at YOUR place last night. We had the clams/mussels/etc. stew (I'm bad with names), the tomato salad and the lamb shanks. Tell your staff we enjoyed the meal and the service. Oh, and it was our 30th anniversary so it was doubly special. Thanks!

My favorite summer dish is green beans with bacon and red potatoes and sliced red tomatoes. But in a pinch, a fresh made taco salad, with shredded lettuce, grated cheese, browned hamburger, diced tomatoes, broken and crunched Nacho chips and lightly toss in Western dressing, but you can use what ever you like, I suppose. It is quick and tastes great.

One of my favorite restaurant dishes of the summer was *someone's* fried green tomatoes with the Trader's Point cottage cheese and tuna tartare. At home, I grooved with herbs (made lots of pestos) and tomatoes. Just last week, I processed 6 jars of tomato confit with garlic, ginger, fresh herbs and the ripest red tomatoes. It will be perfect over pasta in the depths of winter. (Oh, and when I interviewed Alice Waters, she said tomatoes and garlic were her favorite food -- especially in confit form.)
